Wondering how to fold and unfold nodes, seems pretty basic for this type of software.

Is it just hiding in the menu?

If you are referring to the mind-map capability, there is no ability to compress/contract nodes. There is an existing enhancement request to add this capability which you could upvote here: https://community.miro.com/ideas/collapsible-branches-on-the-mind-maps-171
