SSO with users already there

We have users already setup on the site with there content and contacts and teams .
Now we want to enable Azure AD SSO .Those account where created with the same emails that are on the AD. My question is what happens with those accounts ? Will those accounts if the email matches the user unify with the previous data there. Will they be overwritten? It states they will lose access . If this does not go to plan and we disable SSO do we regain access?
