We are building a project from scratch as a two person team and as you can guess we don't have a stable company yet so the free plan is great for us to start with. I am a bit confused about the board privacy in a free plan though, that is even after extensively searching and reading the help documents provided.
If you can please provide a firm answer of who can see the information on our boards in a free account? Is the information on the boards publically/guest accesable?
The only folks who will see the boards within your free plan should be those people who you have manually added to the team by either explicitly adding team members to the account or adding them to the access list for a board.

Also in a Free Plan, all members of that team can view all boards in that team - there are no private boards in a Free Plan team. You can, however, block other team members from editing a board by setting the board’s Share settings to: Team access to the board → Can View or Comment:
If you want everyone on the team to have edit access (the default):
Public Access
The only way those outside of your team can see your boards is if you go into a board’s Share settings and change the Anyone with the link setting to Can View:
Comment or https://help.miro.com/hc/en-us/articles/360012524559-Collaboration-with-Anonymous-Guest-Editors (aka, Guest Editor) access is not an option for the Free Plan.
I hope this answers all of your questions
