One of the cards we have been owrking on has lost all the info inside, there is also no activity showing for the card either.
How can I get that information back?

Unfortunately, modifications of content within an object can’t be restored unless you choose to restore the whole board from a backup which would likely cause you to lose legitimate updates from other cards in the board.
You should be able to see who modified the card in question to at least identify the “perpetrator” by using the activity log…
