Is it possible to change a board to read only for everyone that it was shared with after an event? For example, after a workshop concludes, can I change the board to read only for all the participants to stop folks from editing it? I can do it by going to each person’s name the board was shared with but trying to find an easier way. A global setting to make a board read only for everyone except the owner?

This depends on how the board has been shared. If it was shared with individual “named” users, then you’d have to set the access person by person. If it was for the team, you could change it for the whole team. And if you used the Visitor access method, you could do that in a single step as well.
In all cases, this would be done via the Share dialog box.
