I would love the ability to add a non-connection line. The issue is that when I add a line it is trying to connect to everything around it. I would love the ability to add a line and place it anywhere on the board without it snapping to an object.

YES to this!
Rectangles are too thick for making thin lines in many cases, but you don’t necessarily want the line to move everywhere with the content.
