Sharing Boards and Inviting Collaborators
How board (and project) sharing works in most paid plans (this post talks about the Education Plan, which has the same sharing functionality as the paid Team Plan).

Assuming you are on a paid plan, then yes, you can create a board which you can only see and then add specific users to the sharing list.
