I have a public board were people edited the board. I would like to know how many people actually made changes/participated

There is no way to get a count on this automatically so the manual way would be to open the Activity Log and manually scroll through it making a note of the different participants who edited content. This would only show changes so folks who were viewing content only wouldn’t be shown.
